Introduction



Bakso is one of the most famous Indonesian dishes. It is a meatball made from beef and tapioca flour. The meatballs are usually served in a piping hot broth, accompanied by noodles, vegetables, and other condiments. One of the most important components of bakso is the broth. In this article, we will share with you a recipe for a delicious and savory beef meatball soup.


Ingredients



For the broth, you will need:
- 1 kg beef bones
- 1 kg beef shank
- 3 liters water
- 2 stalks of lemongrass
- 3 bay leaves
- 2 Indonesian bay leaves (daun salam)
- 1 tsp coriander seeds
- 1 tsp white peppercorns
- 1 tsp salt
- 1 tsp sugar
For the meatballs, you will need:
- 500 g ground beef
- 250 g tapioca flour
- 1 egg
- 1 tsp salt
- 1/2 tsp white pepper
- 3 cloves garlic, minced
- 100 ml ice water
For serving, you will need:
- Cooked noodles (vermicelli or egg noodles)
- Fried shallots
- Sliced scallions
- Sambal (chili paste)
- Sweet soy sauce


Instructions



1. Preheat the oven to 200°C. Place the beef bones and shank on a baking sheet and roast them for 30 minutes or until browned.
2. In a large pot, bring 3 liters of water to a boil. Add the roasted beef bones and shank to the pot.
3. Add the lemongrass, bay leaves, Indonesian bay leaves, coriander seeds, white peppercorns, salt, and sugar to the pot. Bring to a boil and then lower the heat to a simmer.
4. Simmer the broth for 3-4 hours, skimming off any impurities that rise to the surface.
5. After 3-4 hours, strain the broth and discard the solids.
6. To make the meatballs, mix together the ground beef, tapioca flour, egg, salt, white pepper, and minced garlic in a bowl.
7. Gradually pour in the ice water and mix until the mixture is smooth and sticky.
8. Wet your hands with water and form the mixture into small meatballs.
9. Bring the broth back to a simmer and add the meatballs to the pot. Cook for 5-7 minutes or until the meatballs are cooked through.
10. To serve, place a handful of cooked noodles in a bowl. Ladle the hot broth and meatballs over the noodles. Top with fried shallots, sliced scallions, and a spoonful of sambal and sweet soy sauce.
